Curry Adi

– 1 kilo chicken breast
– 2 cans of coconut cream (not coconut milk, but cream!)
– 2 onions
– 5 garlic
– 4 zucchini
– fresh ginger
– green onion
– peanuts

cusbara (coriander)
2 mushrooms
Mustard seed
coconut oil

Me:

Use coconut oil for all frying.

Fry part of ginger, coriander, turmeric, add cumin, add chicken for 2 to 4 minutes in pan, in small batches. Move to pot. Add coconut cream, mush it first.3 tsp Salt and pepper and 3 tspcurry, 1 tablespoon.

Fry mustard, onions, garlic, zucchini, green onions, mushrooms, add to pot.

Quantities: 2 k chicken, 4 zucchinis, 2 mushrooms almost fits in medium pot. 10 cloves garlic.

Fry onion, garlic, ginger, coriander, turmeric, add cumin, add chicken for 2 to 4 minutes. Add coconut milk, simmer.

On the side fry: coconut oil, zucchini, green onion, mustard seeds, then add to simmering curry.

Ginat:

For all the frying use coconut oil. Start with about 3 tablespoons.
Fry the chicken, just for a couple minutes so ot gets a bit brown, but doesnt need to fully cook. Take it out and put it in a bowl.
Then fry mustard seeds (around one spoon), very important to stir a lot and only fry them for a minute cause you dont want them to burn, maybe add more oil before you put them in.
Then add garlic, like 7 cloves chopped, and ginger, peeled and chopped very small.
Then add onions, fry for a bit, then mushrooms, fry, then zucchini.
Then pour in the cream, stir, add salt to taste, pepper, and curry, around one tablespoon.
When it boils put in the chicken and let simmer
Make sure to chop and have everything ready before you start, like in a cooking show ☺
Otherwise things end up burning. And be extra careful to stir and not burn the mustard seeds.
